Chicken Recipes?

I was looking over my meal plan for the month, and I think I’m going to
have to change some of them.  A couple of my ideas don’t sound good at
all anymore.  And one of them is for this week!

So, what chicken dishes do you make that your family just loves?  I need some new ideas…

Other than that, not much to say today, really.

I plan to can more apple pie filling today.  The two batches I did on Saturday both boiled over, which makes the seals a bit suspect.  So I’ll do some more to make sure we have enough for the winter.

I started more reorganizing projects yesterday – the closets in the babies’ room and the guest room.  So those rooms look trashed right now.  However, I did put the loft back together yesterday, too (Eric had cleaned the carpet on Sunday), so I was both constructive and destructive!

Eric may actually have things to do at work again, and it may last for a while.  At least he won’t be sitting at his desk bored all day now!

Well, it looks like you got some of the recipes I’d recommend.  I also have an enchilada recipe, different but similar, so I won’t post that.  I also do something similar to Krista’s salsa thing, but with just salsa all day in the crockpot, then sour cream at the end instead of cream cheese.  I serve over rice. 

    Here’s a good one:  Creamy Chicken Italiano.  Cook chicken breasts in crockpot with a packet of Italian dressing mix (the powdered stuff) and 1/4 cup of water.  30 minutes before you want to eat, cream together a can of cream of chicken soup (I used reduced fat and it is just fine) and 8 oz of cream cheese (reduced fat is fine) and add to crockpot to melt.  Also add mushrooms if you like them. Serve over rice or noodles or whatever.  This is absolute comfort food.  Warm, creamy, yummmmm.   I’ve never tried adding veggies, but I think it would be great (I’m thinking carrots……..making it kind of stew-like).

  2. I make chicken, leek and mushroom pie – it’s so yummy.  I don’t have the recipe here but if you want it let me know.  It’s easy to prepare but takes a while to cook!

  3. I read the Kirk Cameron book “Still Growing” and loved it.  I’m just starting this one.   Read Willie Aames and his wife’s book “Grace is Enough” and that one was really good just a heavier read than Kirks.  I really have a lot of respect for Kirk and Candace.  Esp after reading the book.

    Here’s a chicken one we love but it isn’t low fat.  Suppose you could make it that way.  Cut your boneless, skinless chicken breasts in like 3-4 chunks.  Soak in melted butter (best if chicken isn’t cold right from fridge or butter clumps).  Mix equal portions of Parm cheese and Progresso Ital. bread crumbs and roll the chicken in it.  Put into a 9×13 pan and bake uncovered 350 for 45 min- 1 hr.  This is one my kids ask for for their birthday.

    Another is sticky chicken.  Mix 8 oz. 1000 Isle dressing, 1 pkg onion soup mix and 18 oz. jar apricot preserves.  Pour over chicken and bake.  Here I thought I knew it well but can’t tell you how long.  350.  I’ll have to find my recipe and add that later.  We love it.  I’ve done it in the crock pot too.  Those are just a couple I knew from the top of my head.

  4. do you still want some more?  because i have a recipe for Olive Garden’s Chicken Scampi.  It’s garlicy chicken w/ herb angel hair + yellow peppers + red onions + green peppers?  If it sounds good let me know & I”ll type it for ya.  (after I hunt it down inmy kitchen.)

  5. put chicken breasts, small jar salsa, canned corn, can black beans (drained) in your crock pot.  cook all day.  1/2 hour before serving add a chunk of cream cheese so it will melt.  you can either serve it over rice or shred the chicken up and scoop it up with tortilla chips.  either way super yummy.  reduced fat cream cheese is do-able, fat free is not – it just doesn’t melt as well.  you can roll up leftovers in a tortilla the next day too!

  6. I’m making chicken enchiladas tonight, and they are delicious!

    Ingredients: a few chicken breasts, (8) flour tortillas, low fat sour cream, cheese, 3 cans (10 oz.) cream of chicken soup (i use 98% fat free) , small can (4.5 oz) green chilles, 1/2 c. milk or so-

    Directions: Boil chicken, then shredd (using 2 forks)- While chicken is boiling, make filling- combine soup, sour cream, green chilles, and milk, add chicken-

    Next, put even amount of mixture in each flour tortilla, sprinkle with cheese- make sure to spread some soup mixture on bottom of pan (8 by 11), then roll filled tortillas and put them in side by side- save enough mixture and cheese to put on top, covering all tortillas-  (if you or the babies would be sensitive to the green chilles, you could just put them in half of the tortillas). Bake @ 350 for about 30- 40 min or so-

  7. Just cut boneless chicken breast into tenders, dip in egg w/ a T. or 2 of water, then in bread crumbs w/Parmesan, brown in EVOO(hot on each side for a couple of minutes, pour in about 1/2 c. white wine, cover and simmer for about twenty minutes. The most tender chicken in the world, and the alcohol cooks out. Goes with anything.
